- Sopaipillas ("Sofa Pillows")
- Makes 4 dozen.

- 4 c flour
- 1.25 t salt
- 3 t baking powder
- 3 T sugar
- 2 T shortening
- approximately 1.25 c milk
- oil

- Sift flour, measure, sift again with salt, baking powder and sugar. Cut in
- shortening. Add milk to make soft dough, firm enough to roll. Cover and let
- rise 30-60 min. Roll
- 1/4 inch thick on lightly floured board. Cut into diamond-shape pieces.
- Fill frying pan with 1 inch of oil and heat to 370 to 380 deg F. Add a few
- pieces of dough at a time. Lightly brown each side, turning once. Drain off
- excess oil. Serve warm. Optional: can be served after dinner when
- sprinkled with confectioner's sugar and serve with honey to drizzle over the
- bread.
